Blueberry – Yogurt Bowls with Peanut – Black Sesame Brittle

Yogurt bowls topped with fresh blueberries, peanut butter and peanut – black sesame brittle.

Unless I make breakfast for a special occasion, I’m a big believer of keeping things simple. This yogurt bowl is a perfect example.

Do I meal plan or ingredient plan? No, I don’t. I make sure that I have the primary ingredients I use on a regular base stocked up in my pantry. Then I stock up my fridge with fresh veggies and fruits. During the week, I love to get creative with these ingredients for my meals.

I just adore the combination of this bowl so much. Between the fresh and juicy blueberries, creamy coconut yogurt, some crunchy brittle and the peanut butter! This is a winning combo of ingredients. You just can’t go wrong with it.

These bowls are so easy to whip up, or even prep in advance. Make the bowls the night before in a mason jar and throw it in the fridge. Just make sure to add the peanut – black sesame brittle when you’re ready for breakfast, so it doesn’t get mushy.

And you can easily customise this breakfast or snack. Swap out the blueberries with other berries or add additional toppings. Just add anything you love eating!

Blueberry – Yogurt Bowls with Peanut – Black Sesame Brittle

vegan, gluten free

 


Ingredients:

For the Peanut – Black Sesame Brittle:

2 tbsp rice syrup

2 tbsp light muscovado sugar

1 tbsp vegan butter

⅛ tsp baking soda

½ cup toasted peanuts, roughly chopped

2 tbsp black sesame seeds

¼ tsp vanilla

¼ tsp fleur de sel

Extra:

Non-diary yogurt of choice (I used coconut)

Fresh blueberries

Peanut butter

 

Instructions:

For the Peanut – Black Sesame Brittle:

Preheat the oven to 160° Celsius. Line a baking tray with parchment paper.

In a small saucepan, heat rice syrup, sugar and vegan butter. Bring to a boil, stir in the baking soda and let it foam up.

Take of the heat and mix in the peanuts, vanilla and salt. Tip the mixture on the baking tray and spread out using the back of a spoon.

Bake for about 7 minutes. Remove from the oven and immediately sprinkle with the black sesame seeds.

Remove the parchment paper from the baking tray and cool down completely.

Assembly:

Add some yogurt to the bowls, top with blueberries  and drizzle with peanut butter.

Break up the peanut – black sesame brittle and place a few pieces on top.
