Chickpea Omelettes with Roasted Radishes & Garden Peas + Whipped Feta Dip

Spring celebration omelettes!

Is there a better way to celebrate spring than with fresh veggies form the garden?

This chickpea omelette recipe with roasted radishes & garden peas and whipped feta dip contains the best flavours of spring! It’s refreshing, slightly sweet from the peas, salty, with mild herby notes.

First the chickpea omelettes. They’re healthy, filling and easy to prep. To give the omelettes a little extra, I added fresh dill. The herb works so well with both the peas and radishes.

And more, you can make the batter in advance and store it in the fridge overnight. Breakfast or lunch on the go is on my mind.  

Over to the veggies. The radishes are roasted in the oven, which gives ‘em a sweet flavour while still leaving a little bite.

Omelettes and radishes might seem a bit of a strange combination. But seriously, it works incredibly well! And the garden peas, so fresh! I like to keep them natural, that’s what nature tastes like!

And finally the whipped feta dip. It adds a tangy and salty note to the dish, bringing everything together in the most satisfying way. I used store-bought feta for this recipe, as this gives the dip a more creamy finish.

This recipe is extremely versatile, use whatever spring veggies or herbs you want. Serve the omelettes as breakfast, lunch or even as a light dinner. The recipe is:

Chickpea Omelettes with Roasted Radishes & Garden Peas + Whipped Feta Dip

vegan, gluten free, nut free

 


Ingredients:

For the omelettes: (makes about 8 omelettes)

Neutral oil for frying

1 cup chickpea flour (besan)

4 tbsp corn starch

2 tbsp nutritional yeast

1 tsp baking powder

2 tbsp olive oil

¼ tsp turmeric

Pinch kala namak

1 cup water

For the roasted radishes & garden peas:

1 bunch radishes, thinly sliced

Olive oil

Salt, to taste

For the whipped feta dip:

100 grams vegan feta

¼ cup non-diary yoghurt (I used soy)

2 tbsp olive oil

½ tbsp freshly squeezed lemon juice

2 tbsp dill weed, finely chopped

Salt & pepper

Extra:

Olive oil

1 ½ cup (fresh) garden peas

 

Instructions:

For the omelettes:

Combine the ingredients for the chickpea omelettes in a bowl. Gradually add the water and stir until no lumps remain. Set aside for 15 minutes.

Heat a small non-stick pan (~16 cm) over medium heat. Lightly spray with oil. Add a thin layer of batter (~ ¼ cup) and tilt the pan around to distribute evenly. Bake until the batter starts to solidify and bubbles appear. Loosen the sides with a spatula and carefully flip the omelette. Repeat with the remaining batter.

For the roasted radishes & garden peas:

Preheat the oven to 180° Celsius. Toss the radishes with olive oil and season with salt. Spread in a thin layer in a roasting dish. Bake for 10 minutes, stirring halfway.

Meanwhile cook the peas for 3 minutes, drain.

For the whipped feta dip:

Add crumbled feta to a food processor and pulse until small crumbs remain. Add in cream cheese and puree for 4-5 minutes, scraping down the sides when necessary, until feta is super creamy.

Place all ingredients except the dill in a (mini) food processor and blend until smooth.  Scrape the sides with a rubber spatula a few times and continue blending to get a smooth consistency.

Season with salt and pepper. Stir in the dill.

Adjust to personal preferences if needed, different brands of vegan feta may vary in flavour.

Assembly:

Place 1 or 2 omelettes on a plate. Top with the roasted radishes & garden peas. Drizzle with some olive oil and serve with the whipped feta dip. Enjoy!
