Cinnamon Waffles with Fig-Walnut Compote

Fluffy & soft cinnamon waffles with fig – orange compote + fresh figs & walnuts.

It’s fig season. Right now. Don’t miss it!  

Sometimes flavours aren’t there to be bold, but should support the star of the dish. In this case, that star is the fig, and everything else is there trying to help the figs be the best they are.

First, the waffles. They’re are flavoured with cinnamon, it’s there to highlight the figgy flavour, not to talk over them.

Then the compote. Dried figs are simmered in fresh orange juice, and finished with a splash of orange blossom water and walnuts. The floral touch of the orange blossom really helps the figs shine even more like themselves. The walnuts add some crunch with in a nutty way. A match made in heaven!

And maybe some coconut whip? It really brings the flavours together in the most pleasant way, why not?

Cinnamon Waffles with Fig-Walnut Compote

vegan, soy free

 


Ingredients:

For the Fig-Orange Compote with Walnuts:

½ cup dried figs, chopped

½ cup+ freshly squeezed orange juice

2 tbsp maple syrup

2 tbsp coconut sugar

1 tbsp freshly squeezed lemon juice

¼ cup walnuts, chopped

1 tsp orange blossom water

For the Cinnamon Waffles:

Makes 6-8 waffles (depending on the used waffle iron):

Wet ingredients:

1 cup almond milk

1 tsp vanilla extract

2 tbsp rapeseed oil (or other neutral oil of choice)

Dry ingredients:

1 cup spelt flour

2 tsp baking powder

2 tbsp coconut blossom sugar (use 3-4 tbsp for sweeter)

1 tsp cinnamon

Pinch of salt

Extra:

Fig-walnut compote

Fresh figs

Coconut whip

Icing sugar/confectioner’s sugar

Cinnamon

 

Instructions:

For the Fig-Orange Compote with Walnuts:

Place figs, orange juice, lemon juice, maple syrup, and coconut sugar in a small pot. Bring to a boil. Reduce the heat and simmer for 20-30 minutes, stirring regularly (until the figs are soft and the compote gets thick). Add a little extra orange juice if the mixture gets too thick.

Stir in the walnuts and orange blossom water and cook for another minute.

Poor into a sterilized jar and cool down.

For the Cinnamon Waffles:

In a bowl, combine wet ingredients. Stir in the dry ingredients. Let the batter sit whilst the waffle iron is heating.

Lightly grease the waffle iron and spoon the batter into the waffle iron. Bake the waffles according to waffle iron’s instructions. (Mine took five minutes at stand six)

Serve the waffles with Fig-walnut compote, fresh figs and coconut whip. Dust with icing sugar/confectioner’s sugar and cinnamon.

 

Note:

The waffles will be crunchy when just baked, they will get fluffy and soft whilst cooling down.
