Coconut Bacon

Vegan coconut “bacon” that’s smoky, sweet and crunchy!

As a vegan I don’t crave meat nor bacon at all. What I do miss sometimes are big and smoky flavours. The answer; coconut bacon! This stuff is:

  • crunchy
  • smoky
  • sweet
  • salty

This coconut bacon is 100% VEGAN and gluten free. It’s incredible easy to make and will store for a few weeks in an airtight container. Although… it’s hard not to eat it all straight from the oven…

You can use coconut bacon as an accent in salads, soups & stews…, basically any recipe that calls for crumbled bacon. Or just eat it as a snack.

Warning: coconut bacon might have a light, moderate to strong addictive effect to the human body… I dare you to try it!

Coconut bacon, it’s like a high five for your food!


Coconut Bacon

vegan, gluten free, nut free

 


 

Ingredients:

3 cups/150 grams unsweetened coconut flakes

Marinade:

1 tbsp tamari or light soy sauce

1 tbsp maple syrup

1 tbsp water

2 tsp smoked paprika

¼ tsp cumin powder

1 tsp liquid smoke (optional)

Black pepper, to taste

Sea salt, to taste

 

Instructions:

Preheat the oven to 150° Celsius. Line a baking tray with parchment paper.

In a small bowl, mix the ingredients for the marinade. Season wit black pepper and sea salt. Combine coconut flakes and marinade until completely covered.

Spread the coconut on the prepared baking tray. Bake for about 20 minutes, stirring every 5 minutes.

Warning: the coconut burns easily, keep a close eye on the stuff!

Cool down and store leftovers in an airtight container.

 

Note:

Add a pinch of chilli or cayenne for a more spicy version.
