Mexican Rice Stuffed Seitan Squid with a Chunky Tomato Sauce + Crispy Chorizo Salad.
Today I did a cooking demo. Don’t know who had the most fun… me or my pupils. I love, love making seitan! So seitan it was.
The menu; Mexican Rice Stuffed Seitan Squid with a Chunky Tomato Sauce + Crispy Chorizo Salad. 100% vegan, 100% love.
We started the day with the basics of making seitan. And coffee, lots of coffee, to get my brain fully loaded!
Then it was time to cook! Or as I say, playtime.
We started by making the chorizo sausages. Perfectly seasoned, with a spicy kick.
Next the “vegan squid”, a recipe I’ve been working on for a long time. It’s a tofu based seitan, with a few secrets… The squid got filled with Spanish rice and was finished off with a chunky tomato sauce.
And if that wasn’t enough (must have been the coffee kicking in…), I made a salad with crunchy chorizo on top.
And it was absolutely freeking delicious!
Stuff it! Seitan squid that is!
