Crunchy Granola Raspberry Chia Jam Porridge

Healthy oatmeal bowls with raspberry chia jam, crunchy granola topping & fresh raspberries.

This oatmeal bowl with raspberries and granola is packed with all sorts of good stuff to keep you full and energized for a long time. And so yummy!

Prep the chia jam in advance and your healthy breakfast comes together in 5 minutes.

Oats, chia raspberry jam make up the base of this breakfast bowls. Today’s bowls are topped with some (homemade) granola and fresh raspberries.

Your breakfast sets the tone for the rest of the day.

Meanwhile in my garden… My little one is relaxing in the shade of the raspberry plant.

This is my rescue cat, Yalna. She has been living with me for 13 years. She is born to make me happy and I like being bossed around by her… cause that’s what’s cats do best!

Crunchy Granola Raspberry Chia Jam Porridge

vegan, gluten free, soy free

 


 

Serves 2-3:

Ingredients:

For the porridge:

1 cup quick cooking oats (GF if needed)*

2 cup almond milk + extra if needed

For the chia jam:

½ cup raspberries (fresh or frozen)

½ tbsp chia seeds

1 tsp maple syrup

1 tsp lemon juice

Extra:

Fresh raspberries

(homemade) granola (GF if needed)

Coconut syrup or maple syrup

 

Instructions:

For the porridge:

Combine oats and almond milk in a small pot.

Bring to a boil and gently simmer until the milk has absorbed and the oats are cooked and creamy (3 to 4 minutes), whilst stirring.** Add more milk if needed.

Garnish the porridge with chia jam, fresh raspberries, granola and a drizzle of coconut syrup/maple syrup.

For the chia jam:

Mash up the raspberries using a fork. Mix in the chia seeds, maple syrup and lemon juice, let sit until the chia seeds have gelled.

 

Note & variations:

*Use other grains instead of oats, such as teff or buckwheat, or a mix.

**Alternatively combine the ingredients for the oatmeal in a microwave safe bowl and microwave for 3 to 3,5 minutes at 650 Watt.
