Easy Peasy Chicken Style Seitan

Chicken seitan, for happy animals!

This is my go to recipe for when I’m short on time or just being lazy. And since many people requested for the recipe, here it is. For you all to enjoy!

As a seitan lover I have many recipes for chicken style seitan, but sometimes we just need an easy to prep recipe that comes together in no time and without fancy kitchen appliances and ingredients. My easy peasy seitan to the rescue!

This chicken style seitan is so easy to make and is simply perfect for any recipe that calls for chicken. It’s super flavourful, high in protein and perfectly seasoned.

And does it taste like chicken? Well, it doesn’t taste like actual chicken, don’t worry. And I wasn’t trying a 100% mimic meat here, my goal was to make a chicken style seitan that tastes good and can be used in the most versatile way.

Marinate and fry the chunks, bake as they are, use ‘em in stews or add the pieces to wraps and sandwiches. The possibilities are endless! And delicious!

The chicken style seitan will last for about a week in the fridge and can be frozen after steaming. So if you like this recipe, it’s best to make a double batch. I always have some stocked in my freezer for those easy weeknight meals, just thaw in the fridge, prep and eat!

Easy Peasy Chicken Style Seitan

vegan, nut free

 


Ingredients:

Wet ingredients:

½ cup water / veggie stock

1 medium sweet onion / ½ cup, chopped

2-3 cloves garlic, chopped

1 tbsp olive oil

1 tbsp soy sauce

2 tsp apple cider vinegar

Dry ingredients:

1 cup vital wheat gluten

¼ cup chickpea flour

¼ cup nutritional yeast

¾ tsp chicken seasoning

½ tsp smoked paprika

½ tsp coriander powder

¼ tsp cumin powder

¼ – ½ tsp salt (depending on the saltiness of the chicken seasoning and veggie stock)

 

Instructions:

Combine vital wheat gluten, chickpea flour, nutritional yeast and spices in a bowl.

Mix or blend the wet ingredients.

Combine wet and dry ingredients and quickly knead into a dough.

*Knead longer for a firmer seitan.

Shape the dough into a log (or other desired shape), First roll into parchment paper, then into aluminium foil. Wrap the ends tightly.

Place the log in a steamer and steam for 40 minutes. Cool down completely.

Slice, cut into strips, dices… Use as desired or as indicated in the recipe.
