Wake-up Energy Bars!!

Aromatic hazelnut bars combined with coffee and superfood maca for the ultimate energy bars!

Currently, my house is under renovation, so I need food that delivers lots of energy without spending hours in the kitchen. Bars to the rescue!

These hazelnut – coffee bars are packed with healthy energy; medjool dates, hazelnuts & oats and are flavoured with coffee and maca.

The bars have a fragrant coffee aroma, with a buttery texture from the hazelnuts and a soft caramel flavour. Need to say more?

And the best part about these bars, they’re so easy to prep. Just blend everything until smooth! Energy bars for an entire week. Win-win!

These bars are perfect for breakfast or eat them as a filling snack.

Hazelnut – Coffee Bars

vegan, gluten free, soy free, raw

 


Ingredients:

20 medjool dates, soaked for 20 minutes & chopped

1 cup hazelnuts

½ cup (GF) oats

1-2 tbsp espresso/coffee powder (depending on the desired coffee flavour)

1 tbsp maca powder

Seeds of 1 vanilla bean or ¼ tsp vanilla powder

½ tsp fleur de sel

 

Instructions:

Line a baking tray (~18-18 cm)with parchment paper.

Add the hazelnuts and oats to the bowl of a food processor and blend into a flour like consistency. Add the dates, maca powder (if using) and espresso/coffee powder and blend into a smooth paste (a little structure is ok).

Tip the mixture in the prepared baking dish, place a piece of parchment paper on top and press well. Place in the fridge for a few hours. Cut into bars/squares.

Store in the fridge.

 

Variations:

Add a few tbsp of cocoa powder along with the espresso powder.
