Japanese Inspired Nashi Pear Salad

Simply delicious Japanese Nashi pear salad, with avocado & crunchy chickpeas + a zingy ginger – lime dressing.

I’m the type of person who eats a fair share of salads. To some people the whole enjoying part can be hard to believe. But, not all salads are created equally, and when done right they can be so interesting and full of flavour.

To create a stunning flavour full and filling salad with lots texture, I like to follow  a simple formula. Start with a base of greens and protein, add a healthy fat and something crunchy, plus a sweet element. This Japanese inspired salad has all of those components.

About nashi pears.

This piece of fruit comes with a bit of confusion. Is it a real pear? Is it some sort of apple?

The nashi pear is sweet, and we humans like sweet things. And the sweetness shines through so beautifully because they are low acid. They are also incredible crisp and juicy, with a high water content. Nashi pears are slightly grainy, which makes ‘em perfect for salads, but they can be eaten like an apple too.

Nashi pears are more expensive than pears and apples, and you may have to try a few varieties to find your favourite one, but so worth it. Just try them!

The sweetness of the nashi pear against the soft and creamy avocado, combined with the warmth of the crunchy 5-spice chickpeas is out of this world. The dressing with ginger and lime adds a refreshing and zingy note which lifts the entire salad to the next level. And let’s not forget about our greens, I like to use slightly peppery salad leaves for this, to give the salad that extra edge. And finally, a good scattering of black sesame seeds. They add stunning pops of colour and a slight earthy crunch. SO YUMMY!

And it’s such an easy salad, it comes together before you know it! Just a minimum of ingredients, but it looks gorgeous and tastes absolutely delicious!

Japanese Inspired Nashi Pear Salad

vegan, gluten free, soy free, nut free

 


Serves 2:

Ingredients:

For the crunchy chickpeas:

2 cups cooked chickpeas

1 tbsp neutral oil

1 ½ tsp Chinese 5-spice

For the salad:

1 nashi pear, cored & thinly sliced

1 avocado, sliced

A few handfuls of baby lettuce leaves of choice

For the zingy dressing:

2 tbsp avocado oil

2 tbsp lime juice

2 tsp sesame oil

2 tsp freshly grated ginger

Pepper & salt, to taste

Garnish:

2 spring onions, finely chopped

Black sesame seeds

 

Instructions:

For the crunchy chickpeas:

Preheat the oven to op 190° Celsius. Line a baking tray with parchment paper.

Combine oil and 5-spice and toss in the chickpeas.

Arrange the chickpeas on the baking tray. Bake for 15 minutes or until crispy, stirring halfway through.

For the zingy dressing:

In a small bowl, combine the ingredients for the dressing. Season to taste with salt and pepper.

Assembly:

Divide the nashi pears and avocado between two plates, top with lettuce leaves, chickpeas and spring onions. Drizzle with the dressing and scatter with lots of black sesame seeds.
