Kale – Tofu Scramble

Healthy tofu scramble with kale.

Making a scramble for breakfast always makes me happy. Because it’s so easy to make, of course. But more, I love to eat savoury brekkies.

Sometimes I spend ages planning my meals and recipes. And sometimes… this happens. This being one of those quick little meals I like to throw together with what’s in my fridge. And then thinking it might go well on my page…

And so… that’s how you’ve come to be reading about my kale and tofu scramble recipe. For some reason, I’ve been making this over and over again. It’s so easy and quick to prep, it would be a shame not to eat this scramble.

And more, this tofu scramble with kale makes such a healthy breakfast! Always good to start the day (and 2020!) in a nourishing and wholesome way! I like to serve this scramble with a slice of bread and avocado, and maybe a spicy vegan sausage if I’m really hungry.

Hands up for a savoury brekkie?! Try this simple, healthy, vegan kale – tofu scramble for breakfast, brunch, lunch or even dinner.

Kale – Tofu Scramble

vegan, gluten free, nut free

 


Ingredients:

Oil for frying

1 shallot, finely chopped

2 cloves of garlic, finely chopped

400 grams firm tofu

½ tsp turmeric

Pinch of kala namak

Freshly ground black pepper

4 cups chopped kale

2 tbsp nutritional yeast

Salt, to taste

 

Instructions:

Rinse and drain the water from the tofu. Use a towel to remove the excess water. Crumble the tofu by hand.

Heat some oil in a pan to medium heat. Sauté the shallot and garlic until translucent.

Add the crumbled tofu, turmeric, kala namak and freshly ground black pepper (to taste). Fry for a few minutes or until the tofu is slightly browned.

Add the chopped kale and nutritional yeast and sauté for another minute. Season with salt to taste. Remove from the heat.

Serve with bread, avocado, sliced (spicy) vegan sausages, or toppings of choice. Enjoy!
