Mexican Black Bean – Chorizo Burgers with Cilantro – Lime Corn Fritters & Ranch Sauce

The ultimate vegan Mexican burgers!

These Mexican inspired burger packs a punch of flavour with a chorizo flavoured black bean patty, topped with crispy cilantro – lime corn fritters, smothered in a refreshing ranch dressing! Pure perfection!

If you love flavour, and I mean love flavour, then these burger is right up your alley. The burger incorporates all good things for the ultimate Mexican burger.

And yes, I know, it’s a little bit over the top, well maybe a lot over the top… But trust me on this one, the combination of flavours and textures makes it an award winning burger that will rock your burger world!

The base of the burger starts with a chorizo flavoured black bean patty. All you taste is the deliciousness of the spices and some texture of the bulgur wheat.

And did I already mention the corn fritters? Oh my gosh these fritters. Crisp and slightly sweet, with hints of lime, cilantro and jalapeno floating through the yellow clouds. These burgers are really coming together!

Some veggie toppings, cause we need our greens. And what’s a vegan burgers without the addition of fresh garden veggies?! Crunchy lettuce, juicy tomatoes and creamy avocado.  

Finally the burger gets smothered in my homemade ranch dressing, to add a creamy and refreshing note. Can you see it dripping down the sides???? Oh sexy yummy burgers…

The buns, I used homemade black burger buns, I just love the contrasting colours. Just use your favourite buns, homemade or store-bought. The buns are just the vessel to hold all the deliciousness of the burgers.

These Mexican burgers take a little time to prepare, but they’re so worth it! Every bite of it!!!!!

Mexican Black Bean – Chorizo Burgers with Cilantro – Lime Corn Fritters & Ranch Sauce

vegan, soy free

 


Ingredients:

For the black bean – chorizo burgers:

¼ cup bulgur wheat

1 tbsp olive oil

1 shallot, chopped

1 large clove garlic, minced

1 tin black beans, drained & rinsed

1 tbsp tomato paste

½ tbsp smoked paprika

1 tsp cumin

½ tsp coriander

½ tsp oregano

¼ tsp chilli

1 tsp chipotle flakes

⅛ tsp cinnamon

1 tsp coconut sugar

1 tsp apple cider vinegar

½ tsp salt

¼ cup bread crumbs

For the cilantro – lime corn fritters: (makes extra)

1 tbsp ground flax seeds mixed with ¼ cup water

2 cups corn kernels

⅔ cup spelt flour (or wheat flour)

½ tsp baking powder

2 spring onions, finely sliced

¼ cup chopped cilantro

Zeste + juice of 1 lime

1 jalapeno, finely chopped (remove seeds for less heat)

Salt and pepper, to taste

Extra:

Black burger buns or burger buns of choice

Ranch dressing made with ⅓ cup water instead of ½ cup water

Your favourite toppings:

Lettuce

Tomatoes

Avocado

 

Instructions:

For the black bean – chorizo burgers:

Cook the bulgur wheat according package instructions, drain and set aside.

Heat the oil in a small pan. Sauté shallot and garlic until translucent, set aside.

Pulse the beans in a food processor, leaving some structure. Or use your hands or a fork.

Tip the mixture into a bowl and stir in the other ingredients (bulgur, shallot + garlic, spices & seasonings). Season with pepper and salt. Cover and place in the refrigerator for 30 minutes.

Form into 4 patties. Heat a pan over medium heat, add some oil and fry until golden on both sides.

For the cilantro – lime corn fritters:

Mix the ingredients for the fritters in a bowl, season with salt and pepper.

Heat some oil in a non-stick pan over medium-high heat. Add a few tbsp of the mixture, flatten with the back of a spoon. Cook until golden and crispy on one side, flip and cook until browned on the other side (about 3 minutes per side). Repeat with the remaining batter.

*The fritters can be reheated in the oven.

Assembly:

Spread some ranch on the buns, top with a black bean – chorizo patty + a corn fritter, your favourite toppings and an extra drizzle of ranch sauce. Dig in!
