Ranch dressing, Chillies for Chocolate style!

This vegan ranch dressing is creamy, it’s tangy, and it’s made with fresh herbs to create that perfect taste.

Living in Belgium, ranch dressing was a new thing to me. But new, in such a gooooood way! Maybe it’s the creaminess, maybe it’s the fresh herbs or maybe it’s just the combination of flavours. Just love this dressing!

My vegan ranch dressing is made with cashews. They get soaked and blended to work their magic to create the most creamy and dreamy ranch dressing. Totally plant based and diary free!

This ranch gets it’s tang from both lemon juice and apple cider vinegar. The dressing is finished with fresh herbs for that all important vibrant taste and aroma.

And it’s so easy to make! Soak, blend and mix. It will only take five minutes.

You can use the ranch dressing in a variety of ways:

  • as a dip for veggies;
  • on salads;
  • drizzled over pizza’s;
  • with your favourite Buffalo dishes;
  • of course ranch pasta salad;
  • and smothered over burgers!

Oh yummy!

Ranch Dressing

vegan, gluten free, soy free

 


Ingredients:

½ cup cashews, soaked for 4 hours, rinsed & drained

½ cup water of almond milk (or half-half)

3 tsp fresh lemon juice

2 tsp apple cider vinegar

2 tsp olive oil

¼ tsp garlic powder

1 shallot, finely chopped

2 tbsp fresh parsley, finely chopped

2 tbsp fresh chives, finely chopped

2 tbsp fresh dill, finely chopped

Pepper & salt, to taste

 

Instructions:

Bland cashews, water or milk, lemon juice, apple cider vinegar, olive oil and garlic powder into a smooth dressing.

Stir in the shallot and fresh herbs. Season with salt and pepper.

Cool down in the fridge.

The dressing will keep for a few days in the fridge.
