Refreshing Noodle Salad with Mango, Bean Sprouts & Mint

Crunchy & refreshing noodle salad with mango, veggies & mint.

There are two things I love about food. First, an easy meal prep, and secondly leftovers! You just can’t go wrong with this Thai noodle salad!

The salad comes together in no time, just some chopping and mixing, done. And the leftovers… nothing better than cold noodles for lunch.

This salad combines fruity and refreshing flavours, is packed with veggies and topped with crunchy peanuts.

I’ve made some versions of this salad in the past. The combination of fresh veggies, mango and mint is a combination to go nuts over. The noodle salad is so full of Thai flavours people will go “whoa whoa”.

Refreshing Noodle Salad with Mango, Bean Sprouts & Mint

vegan, gluten free, soy free option, nut free option

 


 

Ingredients:

For the dressing:

100 grams rice noodles

1 medium mango, peeled & diced

125 grams bean sprouts

⅓ cucumber, sliced

2 spring onions, finely sliced

½ cup mint leaves, chopped

½ cup toasted peanuts, roughly chopped (use sesame seeds for nut free)

For the salad:

4 tbsp lime juice

2 tbsp tamari (use coconut aminos for soy free)

2 tbsp sesame oil

2 tsp grated ginger

2 tsp coconut sugar

1 Thai green chilli, finely chopped

Salt, to taste

 

Instructions:

For the dressing:

Combine the ingredients for the dressing in a small bowl. Season with salt.

For the salad:

Cook the noodles according package instructions. Drain and rinse.

Combine noodles, mango, bean sprouts, cucumber, spring onions, and mint in a large bowl. Mix in half of the dressing. Sprinkle with the peanuts.

Serve with some extra dressing on the side. Enjoy!

 

Variation:

Add some cooked edamame beans to the salad.
