Rhubarb – Pink Peppercorn Lemonade + Cocktail

Delicious and refreshing lemonade that uses rhubarb and… pink peppercorns!

Last year I posted a recipe for Sparkling Rhubarb – Vanilla Lemonade, a sweet and aromatic tasting summer drink. This year I opted for a totally unexpected combo with… pink peppercorns.

About rhubarb.

There are many varieties of rhubarb. The most important difference is the stalk colour, which can range from intense red to green and even pink speckled. So pretty!

And the flavour… Surprise, the sweetness has very little to do with the colour. The greener varieties are surprisingly sweet and tend to be more productive than the red ones.

Most supermarkets sell the bright red variety. No asking why, I guess?! This type of rhubarb gives your food the most stunning pink colour.

I used rhubarb straight from my garden… the green version. Less pink-y lemonade, equally delicious!

Let’s make lemonade!

The flavour profiles of this lemonade are very interesting. The recipe creates a nice combination of sweet and sharp with peppery notes.

The rhubarb adds a lovely earthy and tart flavour to the syrup. Lemons, of course lemons (!), they give the lemonade their ultra-fresh and zesty taste. The addition of pink peppercorns, gives the lemonade a little burst of spicy pepper. Don’t worry, it’s not overly spicy, it has just a hint of heat, just enough to make it interesting.

This lemonade has a unique and fragrant flavour, that I’m sure you will love. And if you make it for guests, you could even add a shot of vodka or gin and make some a cocktails. And if you do, tell your guests about all the flavour notes to impress them, whilst sipping away the taste of summer…

Rhubarb – Pink Peppercorn Lemonade + Vodka Cocktail

vegan, gluten free, soy free, nut free

 


Ingredients:

For the syrup:

4 cups rhubarb, chopped (see intro)

2 cups water

1 cup sweetener of choice (I used agave)

2 tbsp pink peppercorns, crushed in a mortar & pestle

Juice of 4 lemons

For the lemonade:

Ice cubes

Sparkling water

Lemon slices

Pink peppercorns, crushed or whole

 

Instructions:

For the syrup:

Add the ingredients for the syrup to a pot (except the lemon juice). Bring to a boil, keep stirring to dissolve the sugar. Simmer on low for about 5 minutes or until the rhubarb starts to soften. Cool down.

Pour through a fine sieve and stir in the lemon juice.

For the lemonade:

Pour a few centimetres of syrup into a glass*.

Add some ice cubes and a few lemon slices. Top with sparkling water, sprinkle with a few whole/crushed pink peppercorns. Enjoy!

*Add more or less concentrate to taste.

 

Note:

Add a shot of gin or vodka to turn the lemonade into a surprising summer cocktail!
