Smoky BBQ – Bell Pepper Seitan Burgers + Zingy Lime Mayo

These smoky BBQ seitan burgers are packed with flavour, loaded with veggies and slathered with a zingy lime mayo. These burgers are melt in your mouth delicious!

Sometimes I dream about burgers. Secret moments when I crave a big, juicy burger. Hello, my name is Yanni and I’m a burger-aholic… This homemade version didn’t disappoint! They are the best vegan BBQ burgers.

Let me tell you about this burger.

Today I opted for seitan based patties, flavoured with roasted bell pepper, BBQ sauce and a super-secret seasoning. For extra texture I added cooked bulgur wheat. This combination makes the burgers incredibly juicy and flavourful.

Plus you can’t forget about the toppings. First some all-important veggies; freshly sliced cabbage, juicy tomatoes & lettuce.

And finally the burgers are slathered with a zingy lime mayo, as a contrasting and refreshing note. And why not… some more BBQ sauce, just to be on the safe side.

For the pictures I made a double burger with a side of chipotle potato waffles. And euhm, unless you like messy food, like really messy food, not recommended. But SO GOOD!

Smoky BBQ – Bell Pepper Seitan Burgers + Zingy Lime Mayo

vegan, nut free

 


Ingredients:

For the BBQ – Bell Pepper Seitan Burgers:

Olive oil

1 red bell pepper, roughly chopped

¼ cup BBQ sauce

½ cup water

1 tbsp tamari

¼ cup (whole wheat) bulgur

1 cup vital wheat gluten

¼ cup chickpea flour

1 ½ tsp smoked paprika powder

½ tsp cumin powder

½ tsp garlic powder

¼ tsp onion powder

½ tsp chipotle powder (or to taste)

¾ tsp smoked sea salt, crushed

For the zingy lime mayo:

⅓ cup vegan mayo

Zeste & juice of 1 lime

Fleur de sel

Toppings:

4 large (toasted) burger buns of choice

~2 cup finely sliced cabbage

Lettuce leaves

Tomatoes, sliced

BBQ sauce

 

Instructions:

For the BBQ – Bell Pepper Seitan Burgers:

Preheat the oven to 180° Celsius. Line a baking tray with parchment paper. Lightly coat the bell peppers with olive oil and roast for about 20 minutes, stirring halfway (until they are soft). Alternatively sauté in a pan… Cool down slightly.

Meanwhile cook the bulgur according package instructions. Drain, rinse and cool down.

Combine vital wheat gluten, chickpea flour and spices in a bowl. Mix or blend the bell pepper, BBQ sauce, water and tamari, leaving some structure. Combine wet and dry ingredients and quickly knead into a dough. The dough should be on the softer side but workable, add a few tbsp of gluten if needed.

Divide the dough into 4 equal parts, shape the dough into 4 large burgers. Wrap into aluminium foil.

Place the burgers in a steamer and steam for 30 minutes. Cool down completely.

When ready to serve, heat some (olive) oil in a pan and fry until lightly golden on both sides. Alternatively, brush with olive oil and grill the seitan burgers on the barbecue.

For the zingy lime mayo:

Mix the ingredients for the mayo in a small bowl. Season to taste with fleur de sel.

Assembly:

Spread some zingy lime mayo on the buns, top with cabbage and a smoky BBQ seitan burger, tomatoes, lettuce leaves and an extra drizzle of BBQ sauce. Dig in & enjoy!
