Sparkling Rhubarb – Vanilla Lemonade

Refreshing rhubarb lemonade with fragrant vanilla aroma.

Not many people take the time to make fresh lemonade, which is a pity because it actually takes very little effort and is the best thing to drink on a hot summer’s day.

This sparkling rhubarb lemonade is sweet, slightly tart with the most fragrant vanilla aroma. The lemonade almost tastes like rhubarb pie!

And look at that colour… blushing pink lemonade with little dots of vanilla floating round in the glass. It’s almost a work of art.

It might seem a little decadent, using vanilla pods in a lemonade, but this isn’t just any lemonade, it’s the best rhubarb lemonade!

And if you want, you can add a splash of gin. Well, I will not tell anyone… But awesome!

The rhubarb I used came straight from my garden, crisp and fresh, but you can find it in the supermarket as well.

Sparkling Rhubarb – Vanilla Lemonade

vegan, gluten free, soy free, nut free




For the syrup:

2 cups rhubarb, chopped

1 cup water

½ cup sweetener of choice (I used agave)

1 vanilla pod, seeds + pod

Juice of 2 lemons

For the lemonade:

Ice cubes

Sparkling water

Lemon slices



For the syrup:

Add the ingredients for the syrup to a pot (except the lemon juice). Bring to a boil, keep stirring to dissolve the sugar. Simmer on low for about 5minutes or until the rhubarb starts to soften. Cool down.

Pour through a fine sieve and stir in the lemon juice.

For the lemonade:

Pour a few centimetres of syrup into a glass*.

Add some ice cubes and a few lemon slices. Top with sparkling water.

*Add more or less concentrate to taste.
