Fruity and berry-licious breakfast smoothie!
A smoothie is a perfect way to kick-start your day. And super-duper easy to make!
Last week I harvested the first strawberries from my garden, perfectly sun-ripened and blushing. Summer has officially started. Yay!
So today I’m sharing an ultra-simple smoothie recipe, that showcases fresh summer fruits in all its beauty. Strawberries and apricots. Cause sometimes the simplest flavour combo’s are the best.
For creaminess and to make the smoothie extra satisfying, I added oats and almonds. And no need to add extra sweetener, the fruit and almonds add a natural sweet taste.
Of course you can adjust the thickness of your smoothie. If you like it a bit thicker add less yogurt, or use more for a thinner version.
If you want to turn this smoothie into an even more satisfying and nutritious brekkie, scatter with granola or toasted almond flakes. You might even enjoy this for an afternoon snack or dessert.

Strawberry – Apricot Breakfast Smoothie
vegan, gluten free, soy free, nut free version
Makes 1 smoothie:
½ cup strawberries, chopped & frozen
2 apricots, pitted & chopped
⅓ non-diary yogurt (I used coconut)
1 tbsp oats (GF if needed)
1 tbsp almond meal
Toasted almond flakes (or granola)
Blend the ingredients for the smoothie until smooth. Top with toasted almond flakes and extra strawberries.
Serve immediately. Enjoy your healthy brekkie!
Use an extra tbsp oats for a nut free version.
